Ingredients: 1 avocado (small dark Mexican or California Hass avocado) 2 Tbsp. onion, chopped fine 1-2 slices (include seeds) of jalapeņo pepper (less for milder, more for hotter) 1 1/2 tsp. chopped fresh cilantro (can substitute a smaller amount of dried cilantro) 2 Tbsp. chopped tomato 1/4 tsp. salt, or to taste

Directions:In a bowl, or with a mortar and pestle, thoroughly mash the following into a juicy paste: 1 Tbsp. chopped onion, 1/2 tsp. jalapeņo pepper, 1/2 tsp. cilantro leaves and salt. Cut avocado into a grid and scoop out of skin. Add to paste and thoroughly mix to a rough chunky consistency. Add remaining ingredients. Serve with tortilla chips or the crackers of your choice. Can be served with soup for a nice lunch or quick dinner. |

Notes: Mary Jo says: "This recipe comes from Rosa Mexicano Restaurant in New York City. Despite numerous requests from restaurant patrons, the owner kept the recipe a secret for many years. One day a friend and I met at the restaurant for lunch - and there it was, the guacamole recipe at every place setting. Everyone grabbed them up, stashing them in briefcases and purses. It didn't seem to hurt the restaurant's business, however. It still is the most popular item on the menu."
