9 cloves garlic
9 lb. leg of lamb
2/3 cup olive oil
1 cup red wine
2 bay leaves
salt and pepper

Directions:
Directions:
Mince the garlic and rub into the lamb. Put the lamb in a shallow dish with the oil, wine and bay leaves. Turn the lamb to coat. Cover and marinate in fridge overnight. Remove from the fridge about 1 hour before cooking to bring to room temperature. Drain marinade and discard. Heat oven to 350º. Put the lam on a rack in a roasting pan and sprinkle with salt and pepper. Roast until medium rate (135º), about 2 hours. Let rest 15 minutes before carving.
