1 stick plus 2 Tbsp unsalted butter, room temperature
1 C packed light brown sugar
1 large egg
2 tsp vanilla extract
1 C flour
1 C old-fashioned or quick-cooking rolled oats
1 C raisins
1/2 C chopped walnuts
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 (3-oz) cream cheese, softened
1 C confectioners' sugar

Directions:
Preheat oven to 375º and butter a 9-by 13-inch baking pan. In a large bowl using a wooden spoon, cream the 1 stick butter with the brown sugar, egg and 1 tsp vanilla extract. In a medium bowl, mix together the flour, oats, raisins, walnuts, cinnamon, baking soda and salt, and stir into the butter mixture until combined. Spread the dough in the prepared pan and press into an even layer with floured fingers. Bake until firm in the center, 15 to 20 minutes. Let cool completely in the pan.

Using a electric mixer or a wooden spoon, blend the cream cheese with the remaining 2 Tbsp butter, the confectioners' sugar and the remaining 1 tsp vanilla until smooth. SPread on t top of the cooled cake and cut into 24 bars
