Pastry for 9 inch quiche pan or pie pan
1/2 cup mayonnaise
2 Tablespoons all - purpose flour
2 eggs - beaten
1/2 cup milk
1 (6 oz.) package frozen crabmeat, thawed and drained.
1/2 lb Swiss cheese cut into 1/4 in. cubes
1/3 cup chopped green onion ( or plain onion and some chives (Parsley to add its color flecks)

Bake pastry shell for 10 minutes at 400 degrees. ( I put in 8 in pie pan inside to hold it down to keep it from buckling) Prick pie shell and bake 3 to 5 additional minutes until lightly - till tan. Cool. Combine mayonnaise, four, eggs, and milk. Mix thoroughly ( I used hand mixer) Stir in flaked crab meat, cheese cubes, and onion and parsley. Spoon into shell and bake 350 degrees for 30 to 40 minutes until firm in center. Mine took about 45 minutes and was a beautiful golden brown.
