Non stick cooking spray
2 t. baking powder
1/2 t. salt
3 c flour
1 1/2 cups plus 2T. sugar
1/2 c light corn-oil spread
1/2 c milk
1 T vanilla extract
1 egg
1 1/2 c blueberries
2 T lemon juice

Preheat oven to 350
Grease 9 x 5 loaf pan with non stick cooking spray
In large bowl, mix baking powder, salt, flour, and 1 1/2 c sugar.
With pastry blender, cut in corn-oil, until the mix resembles fine crumbs
Stir in mile, vanilla, and egg, gently stir in blueberries, spoon batter into loaf pan.
Bake loaf for 1 hour and 20 minutes. With skewer prick top of warm loaf. In a cup mix remaining sugar and lemon juice, brush the top of the warm loaf with the lemon glaze.
