21/2 to 3 lbs frying chicken, cut into pieces
salt & pepper
1/4 c olive oil
1 onion, chopped
1 clove garlic, minced
1/2 c mushrooms
1 can tomato paste
2 c hot water
1 bay leaf, crumbled
1/4 t allspice
1/2 t salt

Directions:
Directions:
Sprinkle chicken with salt and pepper, brown all sides in hot oil in a heavy skillet. Push chicken aside and add onion, garlic and mushrooms. Cook and stir for a few minutes. Mix tomato paste with remaining ingredients and pour over chicken then stir. Cover and simmer gently for 30 minutes . Uncover and simmer until sauce is thickened. Serve over rice or pasta.

This was one of my all time favorite recipes that my mom would make me when I came over for dinner. I know that she added a special ingredient when she made this dish, her love!
