1 C. mint flavored choc. morsels
2 pkgs Andes (chocolate) Mints
11/2 C. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 C. sugar
6 tbsp. butter (softened)
2 tsp. vanilla
2 eggs
Powdered sugar
( NOTE: if you don't have mint flavored chocolate morsels use regular chocolate chips and substitute 1 tbsp. of peppermint extract for the vanilla.

1. In Medium bowl, combine flour, baking powder and salt.
2. In small bowl microwave chocolate morsels until just melted.
I3. In large bowl beat together butter, vanilla and sugar. Add in melted chocolates. Beat in eggs. Gradually beat in flour mixture.
4. Cover and chill for a minimum of 30 minutes ( I usually try to do it over night)
5. Preheat oven to 350
6. Shape dough into 1 and 1/4 inch balls, roll in powdered sugar
7. Place on ungreased baking sheet
8. Bake for 10-12 minutes, until sides are set but centers are still slightly soft.
9. While baking unwrap Andes Chocolates.
10. Remove from oven and immediately put one Andes on each cookie while hot.
11. Cool on wire rack
