1 small onion, chopped
1tsp. garlic
1 T. cooking oil
1 small can or 1 cup fresh mushrooms chopped

1 jar lower fat alfredo sauce
1 1/2 pounds of fresh seafood (shellfish such as shrimp, scallops, crab)
1/2 cup of Parmesan cheese
3 cups cooked noodles (I prefer egg noodles)

Directions:
Saute first 3 ingredients in a large frying pan until soft. Add fresh mushrooms halfway through cooking time. If using canned mushrooms, drain and add after onions are soft. When veggies are soft, add fresh seafood and cover with a lid for a few minutes. Scallops should turn opaque and shrimp should turn pink. I use imitation crab meat as well to keep the cost in check.

Add noodles and alfredo sauce to the cooked seafood. Stir it up and let it come to a quick simmer. Remove from heat. Spray a 13 X 9 casserole and dump the mixture in. Sprinkle the Parmesan cheese over the top. Bake for 30 minutes at 375 degrees until it is nice and bubbly.

Serve with a green salad and crusty French bread!
