3 eggs
1/2 lb feta
philo pastry

Directions:
Combine 1/4 cup melted butter and 1 onion in saucepan. Saute for 5 - 10 minutes, on low heat, until translucent. Add 10 chopped scallions(green onion) and 4 Tablespoons chopped dill and 1/2 cup chopped parsley. Saute for 5 minutes. Add 2 packages of spinach, chopped and salt and pepper --a Healthy amount. Mix well. saute for 5 minutes. Cool for 15 minutes.
Beat 3 eggs in a bowl. Add 1/2 pound of feta (I use 1/2 cottage cheese) crumbled and 1/2 cup of parmagiana cheese. Mix well until smooth. Add to spinach mixture mixing well.
Preheat oven to 400 degrees
Philo pastry from safeway. Defrost in fridge for 1 day. Unroll 1 at a time putting melted butter between layers. I used 2 sheets of philo for 1 spanakopita. Put filling on the bottom of a rectangle of philo, fold bottom up once 1/4 of the way to cover the filling then fold in the edges on the side 1inch, and then fold up the bottom 2 times. It should look like the ones I made. Put on a baking sheet with a brown piece of paper on the bottom of the pan so they won't burn. Brush the tops generously with melted butter. Prick with a fork a few times.
Cook until nice and brown on top.
