Ingredients:  
• 4 C rhubarb, chopped
• 2 C sliced strawberries
• 1 TBSP lemon juice
• 3 drops of red food coloring
• 1 ½ C sugar
• 3 TBSP quick cooking tapioca
• ½ tsp nutmeg
• 2 TBSP butter
• Pre-made pie crust

Directions:
Preheat oven to 400. Lightly combine rhubarb and strawberries in a large bowl. Sprinkle w/ lemon and food coloring. In small bowl, combine sugar, tapioca, & nutmeg, mixing well. Toss lightly with fruit until combined. Put in pie shell and bake for 45 mins or until tender.
