3 cups flour
1 packet instant/quick yeast
1 ½ tsp salt
Oil as needed
1 Tbsp corn meal (optional)

Directions:
Combine flour, yeast and salt in bowl. Add 1 ½ cups water and stir until blended. Cover bowl with plastic wrap. Let dough rest for 4 hours in warm place.

Lightly oil work surface and place dough on it. Fold it over on itself once or twice. Cover loosely with plastic wrap and let rest another 30 minutes.
At least ½ half hour before dough is ready, heat oven to 450 degrees. Put a 6 to 8 quart heavy covered pot in oven as it heats. When dough is ready, remove pot from oven. Sprinkle dough with corn meal and carefully place in pot, cover and return to oven.

Cover with lid and bake 30 minutes, remove lid and bake another 15-30 minutes until loaf is brown. Cool on rack.
