15 oz ricotta cheese
4 eggs
10 oz pkg frozen chopped spinach, thawed and squeezed dry
1/2 C fresh parmesan cheese
1/2 tsp dried red pepper flakes or to taste
1/8 tsp nutmeg
8 oz smoked ham
1/2 C pesto
1 jar roasted red peppers, rinsed and patted dry
4 oz provolone cheese
1 pkg refrigerated (rolled up) pie crusts

Directions:
Directions:
Place 1 pie crust in pie dish and prick with fork. Bake at 375º for 10 minutes. Mix well first 6 ingredients. Place ham on bottom crust, then spinach mixture. Place rest of ham on top then layer pesto, pepper and cheese. Place top crust, cut vents to release steam. Bake for 1 hour at 375º.
