4 1/2 lbs. medium red and all purpose potatoes, unpeeled and cut into quarters

2 medium red onions, each cut into 6 wedges
1/2 cup olive oil
1 1/4 tsp. salt
1 tsp. dried thyme
1/2 tsp. coarsely ground pepper
2 garlic cloves minced

Directions:
Preheat oven 425º. In large roasting pan ( 17 x 11 1/2) toss potatoes with remaining ingredients. Roast one hour turning potatoes every 15 minutes until golden and fork tender. Serve potatoes warm or room temperature.
