2 c. leftover mashed potatoes
5 eggs
1/2 c. shredded cheddar cheese
1 T minced onion
Salt/pepper to taste

Directions:
Directions:
Mix mashed potatoes with 1 egg, 1/4 c cheese and minced onion. Divide mixture into 4 portions. Place on greased baking sheet. Make an indentation in the center of each portion large enough to hold one egg without spilling over the top.

Crack one egg into each potato nest. Sprinkle with remaining 1/4 c. cheese. Cover and refrigerate. Bake at 350 for 20 mn. or til eggs are done.
