2 - 10oz pkgs frozen chopped spinach, thawed & drained well

2 c. bread crumbs (crushed from stuffing mix)
1 c. grated Parmesan cheese
6 eggs, beaten
3/4 c. butter, softened
1/2 t. salt
1/8 t. pepper

Directions:
Directions:
Thaw & drain spinach well - pressing excess moisture out through colander, using paper towels. Crush stuffing into 2 c. crumbs.

Mix spinach and remaining ingredients - add bread crumbs. Roll into 1" balls. Bake at 350 for 10 mins. on ungreased cookie sheets. Serve warm.

(I like to make ahead and place cookie sheets into freezer until frozen). Remove frozen balls and store in tupperware container in freezer until ready to use!)
