Ingredients: 2 packs Yeast 2 cups luke warm Milk 8 cups Flour, divided 1 lb Butter, softened 1 cup Sugar 4 Eggs grated rind of 1 Lemon 1 t Salt 1/2 t Nutmeg 3/4 lb Raisins 1/2 cup each Orange peel and Citron 1/4 c Rum 1/2 lb chopped Almonds

Directions:Mix yeast into milk & add 1 cup flour. Set aside to rise. Cream butter with sugar, add eggs one at a time & beat well. Add lemon rind & salt. Combine butter mixture with the yeast mixture. Add nutmeg & enough flour until smooth & elastic. Sprinkle flour over dried fruits. Toss fruit with flour to cover, then add to dough along with nuts & rum. Let rise in warm place until double in bulk. Toss on a floured board & divide into 3 or more loaves. Roll out slightly, spread top with melted butter. Press down the center and fold over double. Brush top with melted butter & let rise in warm space until doubled. Bake at 350º for about 45 min. When cool, ice with simple icing.
Simple icing: squeeze & strain juice from 1/2 lemon. Add powder sugar until it can be spread as icing. |

Notes: When I was growing up, Mom was the primary cook in our home. Dad knows how to cook/bake and is a very good cook/baker, he just didn't cook as often as Mom. But Christmas Stollen was one of Dad's great holiday traditions. He would take a Saturday to make the stollen...and all but destroyed the kitchen in the process. You see the list of ingredients...now imagine an apron-clad Jack Weisenhorn assembling this recipe...it's not pretty! But it is sooooo good!
