2 eggs
3/4 c. sugar
2 tbsp. canola oil
1 1/2 c. flour
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. soda
1/2 tsp. salt
2 c. peeled, chopped tart apple
1 c. fresh or frozen cranberries
1/2 c. chopped walnuts

Directions:
Directions:
In mixing bowl, beat the eggs, sugar, and oil. Combine the flour, baking powder, cinnamon, soda, and salt; add the egg mixture just until combined (batter will be very thick). Stir in the apples, cranberries, and walnuts. Transfer to an 8 x 4 x 2 inch loaf pan coated with non-stick cooking spray. Bake at 350º for 60 to 65 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely.
