2 eggs
1 c. oil
2 c. sugar
1 16 oz can pumpkin (approx. half a giant can)

2 t. baking soda
1 t. salt
2 t. cinnamon
2 t. vanilla
4 c. flour
12 oz. chocolate chips

Directions:
Directions:
Blend together the eggs, oil, sugar, and pumpkin until smooth. Add the baking soda, salt, cinnamon, vanilla, flour, and chocolate chips. Mix well until you have a thick batter. Drop by large spoonfuls onto a cookie sheet. Bake at 375 for 10 minutes.

I love these cookies because they will stay soft for days, even on the counter! Instead of spreading out, they puff so you can fit a lot on a cookie sheet. A friend of mine even uses butterscotch chips and they're still good.
