1 small hen or 5 lbs. fryer leg quarters
1 onion, halved
1 bell pepper (ends only)
2 stalks celery
2 bay leaves
2 tsp. minced garlic
salt and pepper to taste

Directions:
Directions:
Boil the chicken with onion, bell pepper, celery, garlic and bay leaves until tender. Strain chicken broth through a colander and discard vegetables.

Don't do like I did once and forget to put a bowl under the colander, sending the broth down the drain!
