Ingredients:  
2 lbs. crawfish
1/4 c. butter
1/2 c. chopped celery
1 cup chopped onion
1/2 c. bell pepper
2 tbsp. fat
2 cups water
2 tsp. corn starch
1/4 c. green onion tops, chopped
1/4 c. parsley
salt, pepper and red pepper to taste

Directions:
Directions:
Melt butter. Add celery, onions and bell peppers. Cook on low heat until onions are clear.
Add crawfish and 1 1/2 cups water.
Cook 1/2 hour.
Mix corn starch and 1/2 cup water.
Add onion tops and parsley.
Cook 10 minutes.
