2 links smoked sausage, cut in 1/4" pieces or
diced ham.
1 medium onion, chopped
2 cloves garlic, diced or 1/4 tsp minced garlic
1 can Rotel tomatoes
Salt to taste

Directions:
Directions:
2 cups bean soup mix or a mixture of favorite dried beans - wash, drain - cover with water in large Dutch oven; soak for 2 hours or overnight.
Add water to beans to make about 8 cups; add meat, onion, garlic & tomatoes to beans.
Bring to boil, then simmer, covered, for 4 hours. Add more water for desired consistency, if needed.
