1 small hen or fryer
1 onion, halved
2 stalks celery
1 tsp. garlic, chopped
2 bay leaves
12 cups water
salt and pepper
1 can cream of chicken soup
* 2 tbsp. chicken base (optional)
10 med. flour tortillas (cut in strips)

Directions:
Directions:
Boil first five ingredients in water until chicken is tender. Let chicken cool in broth if time allows. Remove chicken and vegetables. Debone chicken and cut into pieces. Bring broth to a rolling boil. Add soup and chicken base. Correct seasonings and slowly add tortilla strips, being careful not to let them stick together. Cook slowly, stirring often for about 1 hour. Add chicken. Keep over low heat until ready to serve. If too thick, add water or chicken broth. * Chicken base is a powder substance. "I buy it at either Sams or Watkins.

This dish was a favorite when I was growing up, and they were made from scratch. Herman and I were at Mother and Daddy's having dinner; Herman commented after each bite how he had not had dumplings like this since his mother made them. I noticed Mother had a funny look on her face, so after dinner I asked her what was going on. She said the dumplings were flour tortillas. Much later...same scenario...Lisa present -- she, knowing this story and trying to agitate, said she used flour tortillas to make her dumplings! Herman said, "They would not be fit to eat." I kicked Lisa under the table, and after this I always used flour tortillas; he never knew the difference!
