1/2 c cilantro leaves
1 large garlic clove, peeled
1 medium onion
1 or 2 Serrano chilies, halved
2 medium tomatoes, quartered
2/3 c tomato sauce
1 tsp red wine vinegar
1/2 tsp salt
1/2 tsp sugar

Insert the metal blade into the food processor (or use blender). Turn the machine on, drop the garlic through the feed tube and process until it is finely minced. Add the onion, chilies, and tomatoes and turn the machine on and off five or six times, until the vegetables are coarsely chopped. Add the tomato sauce, vinegar, salt and sugar and turn the machine on and off twice to blend. Chill at least one hour.
