1 T. olive oil
2 garlic cloves, minced
1 3-4 lb. beef roast (any round or rump)
3/4 c. dry red wine, divided
1 medium onion, thinly sliced
1/2 green pepper, chopped
4 oz. can mushrooms, drained
2 bay leaves
1 tsp. salt
10 1/2 oz. beef broth
2 T. tomato paste
1/2 jar hot pepper rings
egg noodles

Directions:
Combine oil and garlic in a roast-size microwave safe dish - even better, use a soaked clay cooking pot. Cook on high for 1-2 min. Add roast, pouring 1/4 cup wine around bottom. Cook on medium-hi for 45 min. Remove meat and cover it with foil. Let stand 10 min.
To same dish, add onion, green pepper, mushrooms and salt to pot drippings. Cook on high for 4-5 min. Stir in broth, remainder of wine, tomato paste, and hot peppers. Cook on high for 5 min. Slice beef very thin and return to pot. Cover and cook on MEDIUM for 1 hour longer.

Serve over egg noodles.
