4 large zucchini
1 cup chopped onion
2 peeled and minced garlic cloves
2 Tbsp Butter, divided
1 cup Chopped Green Bell Peppers
1 cup chopped tomatoes
1/2 cup Eggs (Beaten. You can also opt for just the whites- we used the whole egg)
2 Tsp Chopped Dried Basil
38 Club Crackers
2 Tbsp Grated Parmesan Cheese

1. Trim zucchini stems and cut each zucchini in half lengthwise, making two "boats" per squash.
2. Carefully hollow them out (Be sure to save the insides!!), leave approx. 1/4-inch around sides and bottom.
3. Place the boats in an oiled baking pan or cookie sheet. (Olive Oil is great!)
4. Chop the vegetables (including zucchini insides), but keep them separate.
5. In a large skillet over medium heat, cook onions, garlic and 1 Tbsp butter until onions become translucent and tender.
6. Add chopped vegetables zucchini; cook until tender-crisp (approx 5 minutes.)
7. Remove from heat, stir in eggs and dried basil.
8. Crush 30 of the Club Crackers and stir into vegetable mixture.
9. Spoon vegetable/cracker mixture into zucchini boats.
10. Melt the remaining butter. Crush the remaining crackers and toss them with the butter for a nice even coating.
11. Stir in the Parmesan Cheese.
12. Sprinkle Parmesan/cracker mix over zucchini boats with vegetable mixture in them.
13. Bake at 375 degrees for 20-25 minutes, until boats are tender but still holding their shape.

Serve 1-2 boats per person with a side salad... AWESOME!

When our dad found out he had Type II Diabetes, we were introduced to a wide range of new, healthy foods. This one was a unanimous favorite in our family!! This meal was instrumental in helping manage his diabetes and reducing his medication requirements.
