3 lbs. lean ground beef (20 or 15% lean round or chuck)
1 cup finely chopped onion
1 cup finely chopped celery
1 1/4 cups catsup
6 drops liquid smoke
1 1/2 tsps. kitchen bouquet and Worcestershire sauce
1 tsp. minced garlic
salt
pepper
pinch of red pepper flakes
1 1/2 cups water

Directions:
Lightly brown beef, drain off the fat and add all the other ingredients. Simmer on low until the celery is cooked. It gets better if you do it for a long time - you can even use a crock pot.

You may add cumin or cayenne pepper if you like. Some people in the Midwest add a small amount of grated cabbage (1/2 cup). Also, some people add brown sugar or molasses.

If you are feeding hungry children, men or a crowd you might like to double. This freezes and reheats well - maybe even better the second time around.

You can serve on a hot dog, coney dog, or any kind of bread that you like.
