Directions:
Place sugar and salt in large bowl, add oil, add 1 cup of flour, yeast, 1 cup of flour then water. Mix until a smooth ball forms, then knead for 5 minutes. Place in a large, oiled, mixing bowl and coat with 1 T of olive oil. Cover with Saran.( If desired, can refrigerate for 18 to 24 hours. Remove from fridge, allow to rise for 30 minutes. Wet hands under the faucet. Sprinkle counter. Roll dough into two balls. Roll balls around (for some reason) and then shape on two pizza pans. Allow to rise for 30 minutes.) If not refrigerating, allow to rise for 30 minutes, form into two balls, shape one ball at a time into a circle on a pizza pan and allow to rise for 30 minutes more. Bake at 350 degrees for 10 minutes and then cool. (you can do this much days or hours ahead). When ready for pizza, garnish any way you want and bake at 425 degrees for 20 minutes.

Personal Notes:
I grease my hands with Crisco, instead of wetting them.
