1 three oz. package Jello Vanilla Pudding Mix, Cook and Serve
1 three oz. package Jello Lemon or Lime
1 3/4 cups water
1 tbsp grated lemon or lime zest
1/4 cup lemon or lime juice
Cool Whip
Graham Cracker pie crust

Directions:
Directions:
Mix the above, cook to boiling. Continue to boil about 3 or 4 minutes. Stir while cooking. Boil gently until thick. Remove from heat.

Add 1 tbsp. grated lemon (or lime) zest and 1/4 cup lemon (or lime) juice. Stir in. Cool until room temp and partially set. Gently stir in 2 cups Cool Whip until well blended.

Pour into a graham cracker crust or butter cookie crust. (You could also use a regular pie crust). Chill. Top with Cool Whip and sprinkle with a little grated zest.

The 8 oz. Cool Whip is enough for 1 pie.

Aunt Ellen made a Strawberry version of this by crushing a cup or so of fresh strawberries and adding water to make the liquid. Do not cook the strawberries and use strawberry Jello. From Grammy's friend Betty Vandament.
