3 T butter
2 T flour
1/2 cup milk
1 1-lb. can salmon
1 egg, well beaten
1 1/4 cup panko or bread crumbs
1 cup American cheese, shredded
Oil for frying, as desired.

Directions:
Directions:
Drain salmon; break up into small bowl.
Add one beaten egg (save one) and 1 cup bread crumbs (save 1/4 cup); stir well.

Make white sauce of the butter, flour and milk;
add to salmon mixture.

Form into balls, place on wax paper; chill.

Dip croquettes into a beaten egg, then the 1/4 cup breadcrumbs followed by shredded cheese.
