2 lg. sweet potatoes
1/2 c. margarine, melted
1 1/2 c. granulated sugar
1/2 c. brown sugar
1/2 tsp. cinnamon
pinch of salt
1 tsp. vanilla extract
3 lg. eggs, beaten
1 c. evaporated milk
2 deep dish pie crusts

Directions:
Directions:
Boil potatoes until done. Allow to cool. Peel and mash completely until there are no lumps. Combine potatoes with margarine, sugars, spices, vanilla, eggs and milk. Beat until smooth. Spread into pie crusts. Cover the exposed edges of the crusts with aluminum foil strips to prevent crusts from burning. Place in preheated 350º oven and bake for one hour. Serve plain or with whipped cream. Makes two pies.
