2 large cucumbers
16 oz. sour cream (approximately)
3/4 c. Apple Cider Vinegar
1/2 white onion, sliced
a few sprigs of fresh dill, chopped (or some dried)

Directions:
Peel and slice the cucumbers, then set them aside in a colander sprinkled with salt. This will help remove some of the excess water. Let them sit about 20 minutes. You can also just set them out on paper towels.
After 20 minutes, place cucumber slices in a large bowl, and add sour cream, vinegar, onions and dill. The amount of sour cream and vinegar really depends on the size of the cucumbers and your personal taste, so add slowly, and taste often! Combine all ingredients until nice and sloppy.

This is one of my very favorite things to eat in the summer. You can let it sit and "marinate" over night if you like really sloppy cucumbers, but even if you decide to eat it right away, they are delicious! My dad Paul makes the best sloppy cucumbers ever tasted.
For a healthier option, you can substitute plain Greek yogurt for sour cream.
