1 large onion - sliced semi thin in small pieces
1 stick of butter
1 pound of arborio rice
1 1/2 quarts of chicken broth (maybe more)
1 glass of red table wine (maybe more)
2 or 3 packages of saffron (maybe more)
1 package of lugunia sausage (thin sausage)
parmesean cheese

BIG ROUND POT - STICK OF BUTTER MELT & SAUTE ONION IN IT TILL LIGHT GOLD ADD RICE & STIR TO COAT .
ADD WINE - WHEN WINE IS ABSORBED YOU WILL START ADDING BROTH YOU MUST KEEP THE RICE MOIST - DO NOT ADD ALL THE BROTH AT ONE TIME-SLOWLY INCORPORATE.
ADD SAUSAGE TO RICE, AS IT THICKENS CONTINUE TO ADD BROTH TILL YOU USE IT ALL UP 20-25 MINUTES
ADD SAFFRON ONE PACKAGE AT A TIME - STIR WELL AT ALL TIMES.

THIS IS A DISH THAT YOU MUST STIR CONSTANTLY - YOU DO NOT LEAVE UNATTENDED, YOU WILL ADJUST TO YOUR OWN
TASTE THE AMOUNT OF WINE, SAFFRON . I USUALLY BROWN (COOK) MY SAUSAGE PRIOR TO ADDING TO THE RICE.
WHEN RICE IS COOKED TO YOUR TASTE - SHUT OFF GAS ON STOVE ADD PARMESAN CHEESE & STIR WELL.. ENJOY.
