2 egg whites
1/4 t salt
3/4 cup sugar
5 peppermints, finely crushed
1/2 t vanilla
1/2 cup Mini chocolate chips

Directions:
Directions:
Beat egg whites with vanilla until stiff. Add salt. Beat until very stiff. Add sugar 1/4 cup at a time. Beat until REALLY stiff. Fold in peppermint and chocolate chips. Drop by small teaspoons full onto greased cookie sheet. Bake at 250 for 40 minutes.

You can substitute Splenda for sugar. A light "airy" cookie....so you can eat more than 1!!!!
