Cook grits in salted water per box instructions. When hot, stir in the butter and cheese and let cool. Put 2 beaten eggs in a measuring cup and fill with milk to make 1 cup. Fold in the cooked grits. Bake in greased casserole one and one half hours at 350º F.

Personal Notes:
Both grits and hominy are very good with meat and fowl. Try canned white herring (Pocahantas). Just open and heat. Drain and add butter. For breakfast, heat quickly in bacon or sausage grease.
