1 stick non-hydrogenated margarine
2 cups natural sugar
1/2 cup non-dairy or regular milk
3 cups rolled oats
5 tablespoons peanut butter
1 tsp. vanilla extract
3 tbsp. cocoa powder

Directions:
Directions:
Line a cookie sheet with a silpat or waxed paper. Melt margarine over low heat in a large saucepan. Add the sugar and milk and increase heat to medium. Bring mixture to a boil for 1 minute. Remove from heat. Add oats, peanut butter, vanilla, and cocoa powder and mix thoroughly. Drop by rounded tablespoonfuls onto the lined cookie sheet. Let stand until firm. This may take a couple hours.
