1 lb italian sausage, homemade if possible
6 large eggs
Milk or half-half
3/4 c. ricotta cheese

Directions:

Estimate 2 eggs per person. Add more sausage and ricotta accordingly.
In non-stick frying pan, brown sausage well. Remove from pan and cool. Slice into pieces.
Drain sausage fat from pan. Add small amount of butter.
In large bowl, beat eggs and add couple tablespoons of milk or half half. Add ricotta cheese to beaten eggs and mix well. Mixture will be slightly lumpy. Put sausage pieces back into pan. Pour beaten egg mix into heated pan. Place cover on pan and cook until sides are slightly set. Do not let bottom of egg frittata get too brown. Flip over sections of frittata to cook top. Keep pan covered for final minutes of cooking. Salt and pepper to taste.
Serve frittata on large serving platter.
