Make sure all items listed are at room temperature.
3 lbs. Cream Cheese
7 eggs
2 cups sugar
1 Tbsp. vanilla
1 1/2 c. Sour Cream
1/2 c. Heavy Cream

Graham Cracker crust
Mix 1 1/2 cups graham cracker crumbs, 3 table spoons of sugar and 1/3 cup of melted margarine. Press onto bottom and sides of a spring form pan. Pour cheesecake batter into unbaked crust.

Cream cheese & sugar until blended.
Add 1 egg at the time.
Add in remaining ingredients until smooth.
(Do not over beat the mixture, cheesecakes are very fussy)

Bake in a moist oven @ 325º for 1 hour. If too jiggly after 1 hour, cook 10 minutes more. Cut oven off and open oven door and let cool for 1 hour in oven.

To keep from cracking, use a knife and run it around the outside edge of the cheesecake when you open the oven door to let it cool.

Moist oven means: fill a 9" x 13" baking dish and fill it with water and let it preheat and stay in the oven the whole time it is cooking.

This recipe is for a 12" Spring Form Pan. Standard pans you buy are only 9". I usually make one 9" and a 6" (to keep for myself).
