1 cup lukewarm water
1/4 cup orange juice
1/4 cup vegetable oil
3 tablespoons molasses, maple syrup, or agave nectar
2 teaspoons instant yeast
1/4 cup nonfat dry milk
3 cups 100% whole wheat flour
1 1/4 teaspoon salt

Thoroughly grease loaf pan. Combine all of the ingredients in a large mixing bowl. Beat the mixture vigorously for about 3 minutes with an electric mixer. (You have to experiment with this, beating more or less to obtain the texture you want.) Scoop soft dough into pan. Cover pan with lightly greased wax paper or tent it with foil and let it rise for about 90 minutes or until dough comes to top of pan. Bake in preheated 350º F. oven for about 30 minutes, tenting it with aluminum foil after 15 minutes. The bread is done when it is golden brown on top. Remove from oven and cool for 5 minutes. Turn out and cool on rack. Let bread cool completely before slicing.
