1 c. Sugar
1tsp. Vanilla
1/2 tsp. Salt
4 squares Bakers Chocolate, grated
12 x 15 inch flat pan with lip
1 pt. whipping cream
12 x 15 inch heavy paper, brown shopping bag works great

Beat egg whites and set aside. Beat yokes and gradually add sugar. Beat it for nearly 20 minutes. Add vanilla and salt. Add egg whites and fold them through. Add chocolate and fold until evenly mixed. Cut a piece from the brown paper bag to fit flat into the pan. Spread the batter onto the ungreased paper and bake at 300º for 30 minutes.
It will fluff up in the oven, and as it starts to settle, it should be done. Let it cool completely; a full day is best.
To remove from paper, put a small amount of water in the pan under the paper to loosen it. Spread 1/2 of the whipped cream over the top, and start rolling from the 12 inch side, jelly roll style. Use the paper to help with the rolling. After completely rolled up, spread the second half of the whipped cream on top of the roll, and sprinkle with chocolate shavings.

This is one of Barbara's many specialties. She always whipped and sweetened her own whipped cream for the chocolate roll, but store bought whipped cream works well if you are short on time. It was always a holiday favorite at "Gram's" house!
