Dry pancake mix:

4 cups quick oats
2 cups white flour
2 cups whole wheat flour
1 cup nonfat dry milk powder
2 TBSP cinnamon
1 TBSP plus 1 tsp salt
3 TBSP baking powder
1/2 tsp cream of tartar

To make 12 pancakes:

2 eggs
1/3 cup vegetable oil
2 cups dry mix
1 cup water

Dry pancake mix:

Combine all dry ingredients together and mix well. Store in air tight container in the fridge. Makes 8 cups.

To make pancakes:

In a medium mixing bowl, beat 2 eggs. Beat in vegetable oil gradually. Alternately beat in the 2 cups of dry mix and the 1 cup of water. Use about 1/4 cup of batter per pancake. Pour onto lightly greased skillet or griddle over medium-high heat. Cook until tops form bubbles and bottom is golden brown. Turn pancake and cook another 2 - 3 minutes or until golden brown.
