1 tablespoon finely minced onion
4 tablespoons butter
2 cups water
2 cups milk
1 teaspoon salt
1 cup yellow stone-ground grits (not instant)
1/2 cup cream cheese, softened at room temperature
1 1/4 cups grated cheddar cheese
3 tablespoons chopped fresh chives

1. Preheat the oven to 450 degrees. In a large saucepan over medium heat sweat the garlic and onion with 3 tablespoons of the butter for 2 minutes, making sure they don't brown or burn. Add the water, milk and salt and bring to a boil. Then reduce the heat to moderate so the liquid comes down to a simmer.

2. Pour in the grits by the handful in a thin stream very slowly, stirring constantly with a whish to prevent lumps. Once they're all in, keep the mixture at a bare simmer and stir constantly with a wooden spoon. Cook the grits, stirring and crushing any lumps that might form against the side of the pan, for 15 minutes. (The grits will thicken considerably while cooking.)

3. Remove the pan from the heat and stir in the cream cheese, 3/4 cup of the cheddar cheese, and 2 tablespoons of the chives. Season to taste with salt and pepper. Smear the remaining butter evenly into a small baking dish that just holds the grits. Place the grits in the buttered dish and top with the remaining 1/2 cup of cheddar cheese. Place the grits on the center rack of the oven for 10 minutes. Remove and sprinkle with the remaining 1 tablespoon of chives.
