Zest and juice of one lemon
2 tbsp EVOO
2 tbsp finely chopped oregano
2 tbsp finely chopped dill
1/2 tsp granulated garlic
1/4 tsp dry mustard
1/4 tsp ground cumin
1/4 tsp coriander
1/4 tsp kosher salt
1/4 tsp cayenne pepper
8 boneless chicken thighs
3/4 cups creamy cucumber or blue cheese dressing
Pita pockets
Lettuce
Ripe tomatoes

Directions:
Directions:
1. Marinate chicken with everything except dressing, lettuce and tomatoes in fridge for one hour.
2. Grill on direct heat on high for 8-10 minutes or until chicken juices run clear.
3. Cool chicken, cut and toss with dressing.
4. Stuff Pita or sandwich and enjoy!
