1 15 oz can of Le Sueur Very Young Small Sweet Peas
1-2 Carrots, diced very small
1-2 Celery Ribs, diced very small
1-2 Green Onions, sliced thin
2 – 4 Garlic cloves smashed and minced fine
Olive oil

Butter

Salt and White Pepper

Fresh Parsley - chopped

French Baguette

Directions:
Directions:
Slowly sauté carrots, celery, garlic and white part of onion in butter and oil just until tender. Add peas. Add salt and pepper to taste. Remove from heat.

Slice the baguette on a diagonal to create about 1/2 inch thick slices. Using a BBQ Grill or Grill Pan, Grill each slice briefly on both sides to toast a bit and add nice grill marks.

Just before serving, put a couple of spoonfuls of vegetable mixture on each bread slice. Sprinkle with finely sliced green part of Green Onion and bit of chopped Parsley. Can add some good parmesan if you wish.

Serve at room temperature.
