Gather 25 pears. Do this between the middle and end of October, just as they are beginning to turn yellow. They are at their sweetest then. Peel outer layer of pear, quarter, and remove core. Run each piece through a hand cranked meat grinder. Use both the meat and juice. In a large pot, warm a cup of the juice on medium heat until warm, about 5 minutes. Add a cup of sugar and warm again. Add three cups of pears to 2 cups sugar until all pears are used. Cook 3 1/2 hours, stirring every 15 minutes. Add one cap of lemon juice for each cup of sugar used. Let it turn a golden color before canning.

Molly Kate and Parker, this is your dad's recipe; it was passed down to him from Maw Maw, and from your great grandmother to her. It is my favorite preserve -- nothing like honey, as the name indicates. My favorite way to eat this is to put the pear honey and a strip of bacon, halved, on a hot buttered biscuit.
