3 C. flour
1 1/2 C. sugar
4 tsp. baking powder
1 tsp. salt
1 1/2 C. quick oats
2/3 C. vegetable oil
4 eggs, slightly beaten
2 C. mashed bananas
2 C. frozen or fresh blueberries(optional)

Directions:
Directions:
Mix together flour, sugar, baking power and salt. Stir in oats. Combine oil and eggs. Add to dry ingredients. Stir in mashed bananas then blueberries. Pour into 2 greased loaf pans. Bake @ 350ºfor 60 minutes. Cool 10 minutes then place on wire rack to finish cooling. Wrap and refrigerate.

This can be made with few calorie by substituting 1/2 of the oil with applesauce and using 1/2 C. egg substitute and 2 eggs.
