2 1/2 C. flour (or half white and wheat flours)
1/2 tsp. baking soda
3 1/2 tsp. baking powder
1 tsp. salt
2 Tbsp sugar
1/2 C. shortening
4 eggs, separated
1 3/4 C. buttermilk

Directions:
Directions:
Stir dry ingredients together. Cut in shortening with pastry blender or fork to resemble cornmeal. Beat egg yolks slightly in small bowl and add buttermilk. Add to dry ingredients. Beat egg whites to stiff peaks. Fold into batter. The batter will be lumpy. Bake in waffle iron till golden brown.
