4 large eggs
2 C. plus 2 Tbsp. milk
2 C. sifted all purpose flour
1 Tbsp. sugar
1/4 tsp. salt
6 to 7 Tbsp. unsalted melted butter
2-3 Tbsp. vegetable oil
apricot or peach marmalade for filling
powdered sugar

Whisk together eggs and 2 C. milk. Whisk in flour, sugar, salt and 4 Tbsp. melted butter. Refrigerate covered 1 to 1 1/2 hours. Should be the consistency of heavy whipping cream. Heat a small amount of oil plus 2-3 Tbsp. butter in 9 inch pan. Ladle 1/4 C. batter into pan and swirl around. Heat 30-40 seconds and turn until golden brown on both sides. Spread cre`pe with marmalade, fold in half and sprinkle with powdered sugar.
