• 1 lb navy beans
• 5 C water
• 2 tsp dry mustard
• ¼ tsp pepper
• ½ tsp salt
• 3 quartered medium onions
• ¼ C brown sugar
• ¼ C molasses
• 2 TBSP sweet pickle juice
• ¼ lb piece salt pork

Directions:

Pick over beans, wash, and cover with 3 C water. Soak overnight. Then add 2 C water, mustard, and rest of ingredients except salt pork and pepper. Boil covered about 1 hour or until shins of beans begin to wrinkle. Start heating oven to 250. Cut salt pork at ½ inch intervals almost all the way through. Place in a 2 qt bean pot, cover with hot beans and their liquid. Generously sprinkle with pepper. Bake 6-8 hours covered or until tender. When beans are 2/3 baked, ad ¾ C of water, enough to cover. Uncover for the last half hour of baking.
