Dressing:

1/2 cup red wine vinegar
2 tablespoons fresh lemon juice
1 Tablespoon dijon mustard
3 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon freshly ground pepper
1/2 teaspoon salt
1 teaspoon sugar
1 cup olive oil

Ingredients for salad:

Head of iceberg lettuce, chopped (I prefer Romaine)
roma tomatoes (quartered)
salami (cubed small)
mozzarella cheese (cubed small)
garbanzo beans
fresh basil
green onions
artichoke hearts
cucumbers
roasted red peppers
pepperoncinis
kalamata olives

Directions:
Directions:
Place all the salad dressing ingredients but the oil in blender and blend for at least 30 seconds. Slowly drizzle in olive oil, blending until emulsified. Best if dressing is made ahead and refrigerated a couple of hours to season.

Sometimes I will also use chicken breast to make it a meal or provolone cheese instead of mozzarella.
