2 tsp vegetable oil
1 lb lean round steak, cut into 2 x 1/4 inch strips
1 sweet onion, chopped
2 tsp minced garlic
1 Tbsp flour
2 C sliced mushrooms
1 C V-8 vegetable juice
1 C beef broth
1 Tbsp Worcestershire sauce
1/4 C minced parsley (or some dried parsley flakes)
1/4 C nonfat sour cream
4 C hot cooked egg noodles (no-yolk)

In a large non-stick skillet heat the oil. Add the beef and cook, turning as needed until browned. Cook about 5 minutes then transfer to a plate. Spray the same skillet with nonstick cooking spray and heat. Add the onion and garlic. Cook about 5 minutes until softened, stirring occasionally. Add the flour and cook, stirring constantly, until the flour is lightly browned, about 1 minute. Return the beef to the skillet and stir in the mushrooms, v-8 juice, beef broth, and Worcestershire sauce; bring to a boil. Reduce the heat and simmer, covered, stirring as needed until the beef is tender, about 45 minutes. Stir in the parsley and sour cream; cook, stirring as needed until heated through, about 2 minutes. Plate the noodles and top with beef mixture.
